What you'll be doing:

Old Maryland Grill Restaurant located at The Hotel at University of Maryland in College Park is looking for Chef De Cuisine. Full-time -- must be flexible to work days, evenings, weekends and holidays. Must have 3 years Executive Chef experience and supervisory experience.

Duties and Responsibilities

  • Able to direct performance of kitchen staff, prioritize, organize and delegate work assignments
  • Interview, hire and train culinary staff. Ability to recruit and staff with qualified personnel
  • Ensure staff's compliance with culinary and Company policies and procedures
  • Review specials with front and back of the house food & beverage staff and keep team up-to-date of any availability changes
  • Able to work all stations in the kitchen
  • Create par lists of food items for daily inventory by kitchen staff
  • Order supplies and ensure they are received and stored correctly
  • Perform accounting functions in a timely manner, from processing invoices to monthly inventories
  • Strong understanding of high volume and quality business
  • Check that all opening and closing duties are completed to standards
  • Ensure culinary staff preparation of menu items follow proper recipes and yield guidelines to ensure quality product
  • Ensure all staff maintain state sanitation/health regulations
  • Train staff in the correct usage and care of all kitchen machinery
  • Develop new menu items; write recipes; prepare menu analysis and recipe costing
  • Prepare effective weekly schedules of culinary team following budgetary and operational guideline
  • Able to maintain time and attendance records
  • Able to effectively coach, counsel, discipline and develop culinary staff
  • Attend food & beverage, BEO and other meetings as required
  • Effectively manage staff through respectful communication, clear expectations, relevant training, productive coaching, holding regular team meetings, and appropriate performance management
  • Lead by example, be a positive example for team in action and attitude
  • Delegate work as appropriate, stating clearly objectives and time-line requirements
  • Monitor and evaluate team members' successful completion of work
  • Encourage effective teamwork
  • Responsible management of department budget
  • Work collaboratively with others to analyze and improve work processes
  • Positive interaction with all levels of management and vendors
  • Develop and adhere to annual action plan/ capital project list
  • Have a disaster recovery system in place and in use
  • Acknowledge all guests and respond promptly to their needs, however busy and whatever time of day. Ensure unresolved incidents are reported to Manager/Supervisor
  • Familiarity with all restaurant services/features and local attractions/activities to respond to guest inquiries accurately
  • Contribute to the team's success by accomplishing tasks and assisting with projects as needed
  • Maintain knowledge and compliance with departmental policies, service procedures, and standards
  • Availability during peak operating times, ie: Weekends, Holidays and Special Events
  • Work as a team member to ensure our guests have the best possible experience
  • Understand company's emergency procedures and be able to apply them when necessary
  • Report any incidents, property damage or injuries immediately to Manager/Supervisor
  • Attend department meetings and training sessions as necessary
  • Other duties as assigned by Manager and/or Supervisor

  • Stand or walk for 8 or more hours at a time
  • Move, lift, carry, push, pull, and place objects weighing less than or equal to 50 pounds without assistance

Requirements:

  • 3 years demonstrated Executive Chef experience
  • High School Diploma or equivalent required
  • Prior supervisory experience required
